Heat the oven to 300°F (150°C) or gas no. 2. Grease two baking sheets with white cooking fat, dust with flour and tap sharply to remove excess. Whisk together the egg whites and salt in a mixing bowl until stiff peaks form. Add half the sugar, 1 tablespoon at a time, whisking after each addition.
