  • 4 oz (100 g) castor sugar

Method

Put the sugar and water into a saucepan and stir over low heat until sugar dissolves. Bring to the boil, then lower the heat and simmer for 1 minute. Add the cocoa powder and whisk until the sauce is smooth. Draw off the heat and pour into a jug. Allow to cool, stirring occasionally. The sauce will thicken as it cools.
