Put the sugar and water or lemon juice into a saucepan and stir over low heat until the sugar has dissolved. Sieve the apricot jam into the pan and stir until blended. Bring to the boil, then lower the heat and simmer for 2–3 minutes until the glaze hangs in heavy drops from the spoon. The trick is to simmer the glaze to a point when it will set to a dry non-sticky surface on cooling.
