  • 6 oz (175 g) plain flour
  • ½ level teaspoon bicarbonate of soda

Method

Heat the oven to 375°F (190°C) or gas no. 5. Grease three baking sheets. Sift the flour, bicarbonate of soda and salt on to a plate.

Cream the butter, soft brown sugar and castor sugar in a mixing bowl until soft and light. Lightly mix the egg and vanilla essence and beat into the creamed mixture a little at a time. Stir in half the flour mixture and mix to a smooth paste. Add remaining
