Heat the oven to 375°F (190°C) or gas no. 5. Sift the flour and rice flour (if difficult to obtain make up the quantity with plain flour) on to a pastry board. Cream the butter and sugar in a mixing bowl until soft and light. Turn creamed mixture on to the sifted flour and work ingredients together with the fingertips to a smooth dough.
