Heat the oven to 425°F (220°C) or gas no. 7. Grease two or three baking sheets with white cooking fat. Cream the butter and sugar in a mixing bowl until soft and light. Break up the egg whites with a fork and beat into the creamed mixture a little at a time, adding a little of the flour along with the last addition of egg. Then fold in remaining flour with a metal spoon.
