  • 6 oz (150 g) plain flour

Method

Sift the flour and salt on to a plate. Cream the butter and sugar in a mixing bowl until soft and light. Lightly mix the egg yolk and sherry and beat into the creamed mixture. Add half the sifted flour and mix to a soft paste, then add remaining flour and mix to a soft dough. Turn on to a floured work surface and shape into a roll about 2
