  • 2 lemons
  • 4 oz (100 g) castor sugar

Method

Squeeze the juice from the lemons and set aside. Put the lemon peel with pith into a mixing bowl along with the sugar. Boil the water and pour it over the lemon peel and sugar. Stir to dissolve the sugar and leave until completely cool.

Strain the mixture into a serving jug, add the reserved lemon juice and the orange juice and chill. Just before serving, stir in chilled ginger ale or g
