  • 3 lemons
  • 4 oz (100 g) castor sugar

Method

Thinly pare the lemon rind using a vegetable peeler and squeeze the juice from the lemons. Put lemon rind and sugar into a bowl. Boil the water and pour it over the lemon rind and sugar. Stir to dissolve the sugar and leave until completely cool. The pared rind gives a good colour and fresh flavour. Add the lemon juice and strain the lemonade into a jug. Chill well. Serve in ice-filled tumblers
