  • 1×70 cl bottle red wine
  • ½ pint (300 ml) water

Method

Put the wine, water and sugar into a saucepan. Thinly pare the rind from 1 lemon using a vegetable peeler, add to the pan along with the cinnamon. Very slowly bring just to the boil, stirring to dissolve the sugar. Draw off the heat, cover with a lid, and allow flavours to infuse for 10 minutes. Then remove the cinnamon stick, otherwise the flavour will be too strong.
