Skate wings are generally sold skinned. Here they are also filleted, which your fishmonger should be happy to do for you.

Ingredients

  • 4 × 175-225 g (6-8 oz) skate wings, filleted and skinned
  • salt and pepper

Method

  • Cut each skate fillet into two or three strips. Season with salt and pepper and squeeze lemon juice all over them. Roughly chop the squeezed lemon, adding it to the water for steaming the fish.
