This tomato-flavoured mayonnaise is best known as the sauce drizzled over a prawn cocktail. However, it also suits most cold shellfish or makes a good dip for chips.


  • 5-6 tablespoons tomato ketchup
  • 300 ml (10 fl oz) mayonnaise


  • Whisk the ketchup into the mayonnaise and stir in the brandy to help balance the strong tomato taste. Season with salt and pepper if needed.
