  • Lay each lobster on a chopping board and cut in half lengthways. Crack the claws with the back of a heavy knife. These can be left attached or the meat removed and arranged in the head cavity of each half.
  • Mix the garlic with the butter, parsley, salt and a twist of pepper in a food processor.
