  • 4-8 rashers of streaky bacon or pancetta
  • 8-12 chipolatas

Method

  • The bacon can be fried or grilled until crispy and served alongside the chicken. Alternatively, lay the bacon over the chicken’s breast while roasting to help maintain succulence, the bacon fat adding to the flavour of the juices. If trying this method, the bird should be roasted breast-side up for the entire time.
