Pork belly can roast in just 1½ hours. However, for an almost buttery texture, it is best to double the cooking time as you’ll find here. This might sound time-consuming, but the cooking couldn’t be easier. For a crunchier crackling, ask your butcher to score the skin.


  • 1 kg ( lb) pork belly
  • coarse sea salt and pepper
  • oil, for brushi


  • Preheat the oven to 160°C/325°F/gas 3. Season the meat side of the pork belly with salt and pepper and place the joint, skin-side up, on a roasting tray with a rack. Brush the skin with oil, sprinkle liberally with coarse sea salt and roast in the oven for 3 hours.</
