While fresh wild mushrooms are only available during the autumn and winter months, good-quality wild mushrooms are available year-round. Here I’ve chosen the wrinkly morels, although a big bag of mixed wild mushrooms would be equally great.

  • Soak the dried mushrooms in 600 ml (1 pint) warm water for 20 minutes. Remove the mushrooms, reserving the soaking water, and trim the stalks. Rinse lightly under cold water to remove an
