A frittata is an Italian flat omelette, called a tortilla in Spain, which is completely cooked through unlike the soft-centred French omelette.

Ingredients

  • 2 medium-large potatoes, quartered
  • 225 g (8 oz) cubes of smoked bacon or pancetta</

Method

  • Cook the potatoes in boiling salted water for approximately 20-25 minutes until cooked through. Drain and leave to cool slightly before peeling and cutting into cubes.
  • Heat a non-stick frying pan, preferably 20 cm (8
