The pear-flavoured mayonnaise is an alternative to the regular pairing of gammon and apple, but if you do fancy apple, simply take a small jar of smooth apple sauce and whisk with 1-2 tablespoons mayonnaise.


  • 2 large ripe pears
  • a knob of butter
  • a squeeze of lime</


  • Peel, quarter, core and roughly chop the pears, popping them into a saucepan with the butter and lime juice. Cook over a low heat for a few minutes until tender and beginning to purée naturally, then whisk in a blender until smooth. Leave to cool. Once cold, whisk in the mayonnaise.
