Roast the leg of lamb on an open rack in the oven with the layered potatoes and onion baking directly underneath, catching the lamb juices and flavouring the potatoes.


  • 5 large baking potatoes, peeled and sliced
  • 2 onions, sliced

  • Mix together the potatoes, onions and melted butter in a roasting tray and season with salt and pepper.
  • Place the tray directly beneath the lamb.
  • Once the lamb is cooked and resting, the potatoes can be finished to a rich golden brown under a preheated grill.
