  • Put the lamb into a large saucepan, cover with cold water and bring to the boil. Once boiling, drain and run under cold water, then return to the pan along with the button onions, carrots and new potatoes.
  • Pour over the stock and bring to a simmer before covering with a lid and cooking for 1 hour 40 minutes, skimming from time to time.
  • Add the pepper, toma
