This lamb dish goes really well with the orange curd carrots.

Ingredients

  • 4 small lamb shanks
  • salt and pepper
  • oil, for cooking
  • 1 onion, sliced

  • Preheat the oven to 160°C/325°F/gas 3. Season the lamb shanks with salt and pepper. Heat a large braising pot with a little oil and fry the shanks until coloured all over, then remove from the pan and keep to one side.
