  • 50 g (2 oz) anchovy fillets in oil

  • Drain the anchovy fillets from the oil and roughly chop. Put the butter and anchovies into a food processor with a twist of pepper and blend until smooth.
  • Spoon the butter on to a sheet of clingfilm, roll into a cylindrical sausage shape and refrigerate or freeze until needed.
