  • 900 g (2 lb) potatoes
  • 4 tablespoons olive oil, plus extra for brus

Method

  • Preheat the oven to 200°C/400°F/gas 6. Leaving the skin on, cut the potatoes into thick chips. Dry the potatoes well on kitchen paper, then coat them in a bowl with the olive oil before scattering over a large baking tray.
