Sirloin Steak with Hot Red Wine and Mustard Vinaigrette

  • 2 × 225-275 g (8-10 oz) sirloin steaks
  • 3 tablespoons olive oil, pl

Method

  • Heat a frying pan and brush each of the steaks with a little olive oil. Season the steaks with salt and pepper on one side only and place them, seasoned-side down, in the pan. Fry for a few minutes before adding the butter, seasoning, then turning the steaks and continuing to fry for a further 2-3 minutes for medium rare. Remove from the pan and leave to rest.
