  • 2 red onions, sliced
  • 2 cloves of garlic, crushed

  • Heat some olive oil in a large, deep frying pan. Add the red onion and garlic and fry over a medium heat until softened and lightly coloured. Spoon in the red wine vinegar and allow it to boil until very little of the liquid is left.

  • Add the cherry tomatoes and continue to fry for 10 minutes.

  • Pour in the passata and stock, bring to a simme
