Heat some olive oil in a large, deep frying pan. Add the red onion and garlic and fry over a medium heat until softened and lightly coloured. Spoon in the red wine vinegar and allow it to boil until very little of the liquid is left.
Add the cherry tomatoes and continue to fry for 10 minutes.
Pour in the passata and stock, bring to a simme
