  • 900 g (2 lb) pumpkin
  • olive oil, for drizzling
  • coarse sea salt and pepper

Method

  • Preheat the oven to 190°C/375°F/gas 5. Leaving the skin on, cut the pumpkin wedges, removing the seeds and stringy pith.

  • Place the pumpkin in a roasting tray, drizzle with the olive oil and season with salt and pepper.
