I like to serve these nutty chips with the roast rib of beef or beef with a green peppercorn sauce and a mixed or green salad. The fries can be roasted while resting the beef.
Cut away the top and bottom of the celeriacs and trim off the surrounding coarse skin. Cut the celeriac into chunky chips.
