I like to serve these nutty chips with the roast rib of beef or beef with a green peppercorn sauce and a mixed or green salad. The fries can be roasted while resting the beef.


  • 2 large celeriacs
  • 3 tablespoons olive oil
  • coarse sea salt and pepper


  • Preheat the oven to 220°C/425°F/gas 7.

  • Cut away the top and bottom of the celeriacs and trim off the surrounding coarse skin. Cut the celeriac into chunky chips.

  • Pour the olive oil into a large roasting tray and heat in the oven f
