  • oil, for cooking
  • a knob of butter
  • 450 g (1 lb

Method

  • Heat a wok or frying pan and add the oil. Once hot, add the butter and the courgettes and cook for 2 minutes, then add the bean sprouts and spring onions.

  • Continue to cook for 1-2 minutes, then season with salt and pepper and the sugar. To finish, drizzle over and stir in the sesame oil.
