  • 1 heaped tablespoon sesame seeds
  • 450 g (1 lb) mangetout

Method

  • Fry the sesame seeds in a dry pan until toasted and golden brown, then remove from the pan to prevent further cooking.

  • Snap the tops from the mangetout and plunge the mangetout into a pan of boiling salted water for 1 minute before draining.

  • Melt the butter in a wok or frying pan. Once sizzling, add the mangetout, then the sesame seeds, an
