  • 2 packets of sliced Parma ham, cut into 2cm (¾ inch) squares
  • 150 ml (5


  • Heat some olive oil in a large saucepan. Add the Parma ham squares and fry over a medium heat for a few minutes until the ham becomes crispy, then leave to one side.
  • Mix together the cream and egg yolks and season with salt and pepper.
  • Meanwhile, cook the pasta until tender. Drain, return it to the hot saucepan and stir in the lemon juice with the egg yolk
