This no-cook raw sauce can also be used as a simple side salad.


  • 8 tomatoes, quartered, deseeded and cut into chunky cubes
  • 225 g (8 oz) mozzarella, cut into small cubes or g


  • In a large bowl, mix the tomato, mozzarella, red onion, basil and olive oil together.
  • While making the sauce, cook the pasta until tender. Drain and add to the finished sauce. Season with sea salt and a twist of pepper.
