Preheat the grill. Brush each muffin half with butter and toast under the grill until golden brown.
Melt half the butter in a frying pan and, once foaming, add the mushrooms and fry over a medium-hot heat for 1-2 minutes until softened. Spoon on top of the toasted muffins.
Meanwhile, beat together the eggs and cream and season with salt
