These pancakes make an easy vegetarian starter or savoury main dish served with a tomato salad. You can also drop the mixture into the pan in teaspoons to create snack bites.

Ingredients

  • 225 g (8 oz) self-raising flour

  • Sift the flour, salt and mustard powder together into a large bowl. Add the eggs and milk and whisk to make a smooth batter. Stir in the cheese, onion and a twist of pepper.
