This rice pudding is good served hot or cold with the toasted plums.


  • 100 g (4 oz) short-grain pudding rice
  • 900 ml (


  • Put the rice into a sieve and pour over a full kettle of boiling water to rinse. Place the rice in a saucepan and add the milk and cream. Split the vanilla pods in half lengthways and scrape the seeds from the centre of each with the tip of a small knife. Add the seeds and pods to the saucepan.
  • Bring the rice to the boil, then reduce the heat to a very gentle simmer
