Charentais melons are the best to use here because their orange flesh gives a rich colour, but any melon will do. The iced melon crystals need to be frozen 6-8 hours before eating, but can also be made up to several days in advance.

Ingredients

  • 2 Charentais melons
  • 6 tablespoons caster sugar
  • juice of 1

  • Chill a container for the melon crystals. Quarter the melons and remove the seeds. Cut away the skin, roughly cut the flesh and liquidize in a blender or food processor to a smooth purée.
