A couple years ago in Mexico City, we discovered the secret to making life-changing guacamole. Never squeeze lime juice directly into the guacamole; it’s too acidic and will overpower the delicate flavor of the avocados. Instead, pickle the red onions in lime juice and that’s all the acid needed, plus it gets rid of the raw onion flavor. Gracias a todos, Mexico!
