It’s much easier than trying to cook a fifteen-pound bird and takes less than an hour. The secret to juicy, flavorful breast meat is butter—lots and lots of butter.

  • 1 turkey breast, bone-in and skin on
  • ½ stick

Method

Make the turkey breast. Allow the turkey breast to sit at room temperature for 1 hour before cooking. A cold breast in a hot oven will cook unevenly and be tough. Preheat oven to 350°F and make the herb butter. Use your fingers to peel the skin
