Enjoy this salad on its own, or serve it on a bed of cooked or raw greens (or have the greens on the side).

Ingredients

  • 1 small red bell pepper, diced

Method

Put the mango, bell pepper, beans, lime juice, parsley, salt, and pepper in a medium bowl and stir to combine. Let stand for 10 minutes before serving to allow the flavors to blend. Top with avocado if desired.
