This healthier version of a classic cabbage dish is rich in color and flavor but free of fat and sugar. Serve it alongside veggie loaves or patties or let it grace your table at holiday meals.

Ingredients

  • ½ cup (125 ml) water or vegetable broth
  • 1 onion, diced

Method

Put the water, onion, and garlic in a large saucepan over medium heat and cook, stirring occasionally, until the onion is soft, about 5 minutes. Add the cabbage, apples, allspice, and salt. Cover and cook, stirring occasionally, until the cabbage is tender, about 20 minutes. Add the vinegar and pepper to taste and cook uncovered, stirring occasionally, for 3 minutes.
