The well-loved taco is an almost-instant meal, yet it’s surprisingly nutritionally balanced. Since the filling is everyone’s favorite part, these tacos are served in bowls instead of in taco shells. Simply warm the beans, chop the veggies, and set out the colorful fillings in pretty bowls.

Method

Put the beans in a small saucepan and warm over medium-low heat. If they’re too thick or stick to the pan, add a small amount of water. Alternatively, warm the beans in the microwave. Put the beans, lettuce, tomatoes, salsa, carrot, and avocado in separate bowls on the table so everyone can create their favorite combination.
