Chia seed pudding makes a wonderful dessert or wholesome breakfast. If you like, top it with fresh berries or sliced fruit.

Ingredients

  • 2 cups (500 ml) fortified unsweetened soy milk or other nondairy milk

Method

Put the milk, dates, and vanilla extract in a blender and process until smooth. Add the chia seeds and pulse until the seeds are distributed through the liquid but not blended. Transfer to a storage container, cover tightly, and refrigerate for at least 2 hours. Stir well before serving to break up any clumps of chia seeds.
