This dish hugs you back with its deep flavours. It is fantastic in the winter, when all you want is a hot stew to warm you from the inside out. I’ve simplified the method here to make it a one-pot, dump-it-all-in type of dish, but without sacrificing any flavour.
Generously salt the ribs. In a large, wide, heavy-based pot, heat 2 tablespoons of vegetable oil over a medium-high heat. Working in batches, brown the ribs on all sides for about 8 minutes per batch. Transfer the ribs to a plate and repeat with the remaining ribs, adding more oil to the pot as needed.
