Use this sauce to accompany roasted or boiled meats or for boiled, poached, or grilled freshwater fish. Capers can be found a little bit in Istria and the Carso, but most of them came to Trieste by importation and then headed to Vienna. People in Friuli tasted them along the way and added them to the local repertoire of sauces. Notice the presence of herbs and spices that you would never see in caper sauces from other places.
