There are at least three ways of making a frittata in Friuli-Venezia Giulia. The most typical way is in a skillet using either butter or olive oil (and on some occasions lard). In Trieste, they make a fluffy frittata by beating the whites first before adding other ingredients. Another type of frittata involves cooking the eggs in the oven. Any way you prepare it, the resulting frittata has a chestnut-brown, slightly firm skin on both sides. Most frittatas have fillings and can be served hot
