A filled frico such as this one and those that follow uses less cheese because it has other ingredients as well. Farmer’s Frico is typical of the remotest towns in Carnia, such as Sauris and Ampezzo. Speck is bacon that is cured and smoked before being aged for 6 months.


  • 5 ounces/150 g speck or pancetta, diced
  • 1 yellow onion, cut into thin slices


Heat the speck or pancetta in a medium-size pot or casserole for a few seconds over medium heat until it begins to render some fat. Then add the onion slices.
