This preparation is similar to Farmer’s Frico. While that preparation is very place-specific to upper Carnia, Frico cun Cartufùles is found in much of the region.

Ingredients

  • 2 tablespoons/30 g unsalted butter
  • 1 yellow onion, cut into thin slices

Method

Melt the butter in a medium-size pot or casserole for a few seconds. Add the onion slices. Once they begin to give off a fragrance, add some salt and pepper to taste, and then the potatoes. Stir with a wooden spoon to combine the ingredients. Then add cup/75
