This is a creamy cheese spread (also called Liptovsky syr) that is popular in Trieste and Gorizia. It is also widely consumed in Hungary and eastern Austria. Surely it is a legacy of the years when Venezia Giulia was under the rule of Vienna. I first tasted it as a child at Zahar’s, the well-known Manhattan emporium.
