I tasted this soup in Ampezzo in western Carnia, practically at the border with Veneto and Alto Adige. In the latter region they make a wine soup (without apples) with Terlano wine, which is a blend of Pinot Bianco, Chardonnay, Riesling Italico, Sauvignon Blanc, Sylvaner, and Muller Thurgau. To make the Friulian soup, with apples, I would recommend a similar blend, if you can find it.
