This is a divine preparation of humble origin that can grace the tables of kings and delight the most jaded gourmand. It is an ancient dish that I learned from the delicate hands of Dina Rapuzzi, wife of Paolo, the owners of the historic Ronchi di Cialla winery. The name means “knife handles” and comes from the particular shape of these gnocchi, which are more like clouds.
