These are often mistakenly referred to as pumpkin gnocchi. They can be made with pumpkin instead of squash, hut the traditional vegetable in Friuli is closer to what people elsewhere might call butternut squash. Either way, you need about 1½ pounds/675 g of the vegetable you select. The classic preparation includes a topping of smoked ricotta, melted butter, and a little sage, and it is scrumptious.
